The term "high altitude coffee" is one of 11 terms used to describe coffee quality in Mexico, but this one in particular speaks of outstanding quality. To qualify for this distinction, the minimum altitude at which the coffee plantation must be grown is 900 meters above sea level, a characteristic that can be found in abundance in Chiapas.
