The term “high-altitude coffee” is one of the 11 used to qualify the quality of coffee in Mexico, but this one in particular speaks of outstanding quality. To comply with this distinction, the minimum altitude at which the coffee plantation must grow is 900 meters above sea level, a characteristic that can be found in abundance in Chiapas.
